The plant is commonly used as an herbal plant for treatment.

Ingredients of Bilimbi / Bimbli Pickle

  1. You need of Bilimbi/Bimbli.

  2. It’s of oil.

  3. It’s of Mustard seeds.

  4. It’s of cumin seeds.

  5. You need of pepper corns.

  6. It’s of Whole Green Chillies (about 25-30).

  7. It’s of garlic pods.

  8. It’s of Curry leaves.

  9. It’s of Sugar (as required).

  10. It’s of Salt.

  11. Prepare of Vinegar (optional).

Bimbli is a fruit which is used widely in South Canara.

It is very sour taste and people use it for preparing pickle or use it cooking instead of tamarind or lemon.

Bimbli is commonly known as bilimbi or Averrhoa bilimbi.

Syrup made from Bilimbi is a cure for fever and inflammation.

Bilimbi / Bimbli Pickle step by step

  1. Heat oil in a pan. Add Mustard seeds and fry till it pop..

  2. Add Cumin seeds and fry it for 3 mins..

  3. Then add pepper corns and again fry it for 3 mins..

  4. Add green chillies and fry till it changes its colour..

  5. Add garlic pods and fry again till its golden in colour..

  6. Now add curry leaves and fry again till it crisps..

  7. Then add Salt and sugar.. Mix well. Let in on a low flame for about 4 mins.turn off the stove and keep it aside. Let it cool completely.

  8. Note: You can even refrigerate the masala for 1 month..

  9. Wash and wipe bimbli. Chop it into slices…

  10. Note: Bimbli should be fresh..

  11. Add it into above mixture.. mix well…

  12. Rest it for 2 hours..

  13. Now its time to taste. Check if the sourness for bimbli is enough, if not, add vinegar and mix well..

  14. Rest it again for over night or for about 7-8 hours..

  15. Note: Rest the pickle in stainless steel/plastic vessels, or else it contaminates with other metal..

  16. Store it in a container and in cool temperature..

  17. Serve the delicious pickle with rice or chapati…

It is also used to stop rectal bleeding and alleviate internal hemorrhoids.
