You need 1 kg of Bilimbi/Bimbli.

You need 1/4 Cup of oil.

You need 2 tbsp of Mustard seeds.

Prepare 2 tbsp of cumin seeds.

You need 2 tbsp of pepper corns.

Prepare 1 Cup of Whole Green Chillies (about 25-30).

Prepare 1/2 of garlic pods.

It’s 50 gms of Curry leaves.

Prepare 1/2 Cup of Sugar (as required).

Prepare As required of Salt.

Prepare 1/4 Cup of Vinegar (optional).

Heat oil in a pan. Add Mustard seeds and fry till it pop..

Add Cumin seeds and fry it for 3 mins..

Then add pepper corns and again fry it for 3 mins..

Add green chillies and fry till it changes its colour..

Add garlic pods and fry again till its golden in colour..

Now add curry leaves and fry again till it crisps..

Then add Salt and sugar.. Mix well. Let in on a low flame for about 4 mins.turn off the stove and keep it aside. Let it cool completely.

Note: You can even refrigerate the masala for 1 month..

Wash and wipe bimbli. Chop it into slices…

Note: Bimbli should be fresh..

Add it into above mixture.. mix well…

Rest it for 2 hours..

Now its time to taste. Check if the sourness for bimbli is enough, if not, add vinegar and mix well..

Rest it again for over night or for about 7-8 hours..

Note: Rest the pickle in stainless steel/plastic vessels, or else it contaminates with other metal..

Store it in a container and in cool temperature..
