This is the recipe my mother has always used. Made with convenient canned beans, this quick and healthy Indian recipe is an authentic chickpea curry that you can make in minutes.

North Indian Chickpea curry also known as Chole.

This is quite a classic north Indian curry made with chickpeas and it is best to use dried chickpeas soaked overnight for best results.

Let the curry come down to room temperature, store in an airtight container and freeze.

Ingredients of Chickpeas(Chole)curry

  1. It’s 1 cup of chickpea(chole), soaked overnight.

  2. It’s 4 tbsp of oil.

  3. You need 1 of bay leaf.

  4. You need 1 inch of cinnamon stick.

  5. It’s 1/2 tsp of cumin seeds.

  6. You need 1 of onion, finely chopped.

  7. You need 1 tsp of ginger-garlic paste.

  8. You need 2 of tomatoes, finely chopped.

  9. You need 1 tbsp of red chilli powder.

  10. Prepare 1/2 tsp of turmeric powder.

  11. You need 1 tsp of coriander powder.

  12. It’s 1 tsp of cumin powder.

  13. It’s 1 tsp of dry-mango powder.

  14. It’s to taste of salt.

  15. It’s 1 tsp of chole masala.

  16. It’s 11/2 cups of water.

  17. Prepare 2 tbsp of coriander leaves, finely chopped.

Chickpeas are naturally quite dry inside even after simmering for a long time.

They don't naturally retain much moisture.

This is one of the things that makes this chickpea curry or Punjabi chole the delicious curry that it is.

By cooking them with teabags, they retain the moisture which is important for Punjabi chole.

Chickpeas(Chole)curry step by step

  1. Then add soaked chickpea. make sure to soak chickpea overnight..

  2. Followed by 1 cups of water in the cooker and the chickpeas with a bit of baking soda..

  3. Pressure cook for 7-8 whistles on medium flame..

  4. Allow the pressure to release by itself before opening cooker..

  5. Firstly, add oil in a deep pot.

  6. Furthermore, saute bay leaf, cinnamon stick and cumin seeds till they turn aromatic..

  7. Add finely chopped onions and ginger-garlic paste. saute till it turns golden brown..

  8. Also add tomatoes and saute till they start releasing oil..

  9. Further, add chilli powder, turmeric, coriander powder, cumin powder, aamchur powder, garam masala and salt. saute for a minute..

  10. Further, give a good mix. and check the seasonings..

  11. Blend the mixture and make a paste..

  12. Add the paste and 1/2 cup water..

  13. Then add the chickpeas and cook for 5 minutes..

  14. Mix well and garnish coriander leaves..

  15. Finally, serve with bhatura..
