Recipe: Eating on a Dime Achari Methi kadu Delicious, fresh and tasty.

Achari Methi kadu. Achari Kaddu Ki Sabzi Recipe is a dry sabzi made with pickle masala that has the slight flavor of tanginess and strong flavor of spices. Pumpkin is a vegetable that is filled with lots of nutrients, as it has good amount of water content present in the vegetable. It is good for reducing cholesterol as well.

Take some oil in the pan.

When oil is hot, add fenugreek seeds, mustard seeds and cumin seeds, saute for few seconds.

Now add asafoetida, finely chopped green chilly, ginger,turmeric powder, coriander powder and saute the spices for a while.

You can cook Achari Methi kadu using 27 ingredients and 11 steps. Here is how you achieve it.

Ingredients of Achari Methi kadu

  1. You need 500 GM of long Green pumpkin (shredded).

  2. You need 3 cups of fresh and clean fenugreek leaves.

  3. You need 1 of onion (diced).

  4. It’s 2 of tomatoes (diced).

  5. You need 6 cloves of garlic (sliced or chopped).

  6. It’s 2 of green chillies..sliced.

  7. It’s 1 inch of ginger…grated or Julien cut.

  8. It’s 1/4 cup of oil (if you want you can use more than it).

  9. It’s of Fresh coriander as per need.

  10. It’s of Whole spices.

  11. It’s 2 of cinnamon sticks.

  12. Prepare 2 of bay leaves.

  13. You need 1 of black cardemom.

  14. You need 3-4 of Curry leaves.

  15. It’s of Achaar masala (homemade) you can use readymade too…

  16. You need 1 tbs of red chillies powder.

  17. You need 1/4 tsp of crushed red chillies.

  18. You need 1 tsp of Cumin powder.

  19. It’s 1 tsp of coriander powder.

  20. Prepare 1/2 tsp of turmeric powder.

  21. Prepare 1/2 tsp of fennel seeds.

  22. Prepare 1/2 tsp of black seeds (kalonji).

  23. You need 1/2 tsp of fenugreek seeds.

  24. Prepare 1/2 tsp of mustards seeds.

  25. Prepare 3/4 tsp of salt or as per taste.

  26. Prepare 1 tsp of chaat masala…

  27. You need 3-4 tbs of If you are using readymade masala then use.

Kaddu is the Hindi word for Pumpkin. and this recipe only has pumpkin, pumpkin and pumpkin in it 🙂 so a must-try for all pumpkin lovers.

Apart from this recipe, you can also make Khatta metha kaddu for fasting.

Achari Methi kadu instructions

  1. Prepare your ingredients and cut the veggies….

  2. Peel,wash and shred the pumpkin….

  3. Prepare your achar masala and whole masala ready.

  4. Clean and wash fenugreek leaves properly….roughly chopped it and keep aside….

  5. Take big wok or pateela add in oil, sliced garlic and whole garam masala….fry on low to medium flame until light brown and aroma comes…..

  6. Now add diced onions and tomatoes, achar masala, curry leaves in it…..

  7. Cook for 3 to 4 minutes only and add fenugreek leaves…..

  8. Stir for 3 to 4 minutes more and now add shredded pumpkin and leave on steam cooking by covering with lid for 5 minutes only….

  9. After steam cooking just stir constantly for more 2 to 3 minutes to dries out the water….add green chillies and Julien cut ginger…turn off the heat and cover it for more 1 minute until aroma of ginger and chillies absorb in the veggies….tadda yummmmmmmmm kadu methi is ready……

  10. Enjoy with hot nan or chapati and with fresh seasonal salad…. Garnish with fresh coriander.

  11. #Special note..I dont boil the methi as in this way the original taste, nutrition and aroma can be wasted…so avoid to boil the methi or spinach.. if needed just blanched it in it's own water…..

It also goes well with plain parathas or phulkas.

Serve this delicious Aloo Methi Curry garnished with finely chopped coriander leaves with any Indian flatbreads and enjoy!

Simply wash the leaves to remove any mud or impurities before cooking.
