Crunchy Methi Muthia. Methi Muthia, a popular snack from Gujarati Cuisine. Methi leaves are washed, chopped and mixed with wheat flour, besan and other indian spices to make a dough. The dough is then shaped into cylinders and steam cooked.
Muthia are one snack that you can enjoy it either warm or cold, it tastes great both ways.
It is a great option to pack it in your kid's lunch box.
I prefer to eat as tea time snack mostly.
You can cook Crunchy Methi Muthia using 13 ingredients and 4 steps. Here is how you cook it.
Ingredients of Crunchy Methi Muthia

Prepare 1 1/2 cups of chopped fenugreek (methi) leaves.

You need 1/2 cup of whole wheat flore (gehun ka atta).

Prepare 1/2 cup of besan (bengal gram flore).

It’s 1 1/2 tsp of ginger-green chilli paste.

It’s 1/2 of lemon juice.

Prepare 1/4 tsp of turmeric powder(haldi).

It’s 2 tbs of sesame (til).

Prepare 1 tsp of garam masala.

Prepare 1 tsp of sugar.

You need 1 tsp of chilli powder.

Prepare 1/4 tsp of asafoetida(hing).

It’s to taste of salt.

It’s 3 tbs of oil +oil for frying.
Methi muthia are steamed or fried dumplings made from chickpea flour and fenugreek leaves/methi.
There are various ways of making muthia… I always make these with chickpea flour.
But you can also make them with whole wheat flour, bajra (pearl millet) or jowar (sorghum) flour.
The Methi Muthia or the Fenugreek dumplings are either eaten as a snack or added to gravies and made into a main dish.
Crunchy Methi Muthia instructions

Combine the methi and all the remaining ingredients in a bowl and knead in to dough, using approx. 3 tbsp of water..

Take some portion of dough and shape roughly in to an oval by rolling it between your palms and fingers..

Fry these muthias in hot oil, a few at a time, on a low flame till they turn golden brown..

Serve these crunchy Methi Muthias with green chutney and sauce..
These are either fried or steamed depending on how you want to use them.
For today's recipe I have fried them as I am going to make Undhiyu out of these and use them in a main dish, the recipe for which shall follow shortly.
