  1. Prepare 1/2 cup of maida.

  2. It’s 1/4 of th tsp baking powder.

  3. Prepare 1 pinch of elaichi powder.

  4. Prepare 1/4 of th cup ghee.

  5. It’s 1 tbsp of besan.

  6. It’s 1 tbsp of suji/rawa.

  7. Prepare 1/4 of th cup Powered sugar.

Cookies/ Naankhatai step by step

  1. Take a bowl, add maida, suji, besan, baking powder. Mix them well..

  2. Now take nother bowl and add ghee + powdered sugar & elaichi powder into it. Whisk it hard until it becomes light & fluffy. Now add the maida mixture into it and make a soft dough out of it. Add 1 to 2 tsp of milk if it hardens out. Keep it aside..

  3. For pre-heating: Place a large kadhai, put sum salt into it so dat the base of the kadhai gets coated with salt. Place a small steel lid or vati in between the kadhai and cover the kadhai and keep it for pre-heating, 3 mins in high flame and 5 mins on low to medium flame..

  4. Now divide the dough in the size of pedas and gently give it a cross cut in between the pedas with a knife and put sum chopped pistachios ovr it. Now grease a flat plate with sum oil/ghee and place the pedas/naankhatais over it. Now our kadai is pre-heated. Now place the plate in the kadhai properly and cover it with a lid. Keep the flame low and bake them for 25 to 30 mins..

  5. Remove it from the gas and let it cool down completely. Now lift them with a flat spoon or knife & serve them fresh with some tea/coffee..

You can also replace sugar with coconut sugar.
