Achari Gosht. Achar gosht is an authentic Pakistani recipe which combines a range of flavours to interest your palate. Overall, achar gosht or achari gosht looks like the usual curry dish, but it is far from ordinary. Traditionally, achar gosht is in fact a spicy pickled mutton curry.

Ingredients of Achari Gosht

  1. It’s 500 gm of mutton.

  2. It’s 1/4 cup of mustard oil.

  3. It’s 1/2 of onion,finely chopped.

  4. You need 2 tsp of ginger paste.

  5. Prepare 2 tsp of garlic paste.

  6. You need 3 tbsp of yogurt, heaped.

  7. It’s 1.5 tsp of kashmiri red chilli powder.

  8. You need 1/2 tsp of turmeric powder.

  9. It’s 2 of tomatoes finely chopped.

  10. It’s 3 of green cillies,slit lengthwise.

  11. You need 1 pinch of asafoetida.

  12. Prepare 1/2 tsp of brown sugar.

  13. You need 10-12 of curry leaves.

  14. It’s to taste of salt.

  15. It’s as needed of dash of lemon juice.

  16. It’s as needed of chopped coriander leaves for garnish.

  17. You need of pickle spices (dry roast until the aroma is released. grind to a slightly coarser than fine powder).

  18. Prepare 1 tsp of black mustard seeds.

  19. It’s 1 tsp of cumin seeds.

  20. Prepare 1 tsp of fennel seeds.

  21. You need 1/2 tsp of fenugreek seeds.

  22. Prepare 2 of cloves.

  23. You need 1/2 tsp of nigella seede.

  24. You need 4 of dry red chillies.

  25. It’s 1/2 tsp of carom seeds.

  26. You need 1/2 tsp of aniseed.

  27. It’s 1/2 tsp of whole black pepper.

Achari Gosht / Achari Mutton (अचारी गोश्‍त) is a wonderful, pretty simple yet absolutely ravishing recipe which hails from Awadhi cuisine of Uttar Pradesh.

Achari Gosht got its name due to the presence of Achari / pickled flavours into it.

It is cooked in Mustard oil with onion seeds, mustard seeds, fennel and fenugreek seeds, and all these are key ingredients for any.

Achari means 'pickled' in Hindi, and achari lamb is a classic curry that melds sweet and tart components magnificently for a festival of flavour in the mouth.

Achari Gosht instructions

  1. In a wide bottomed, nonstick pan, heat the mustard oil to smoking point. Turn off and let cool completely..

  2. In a bowl mix together yogurt,warter,salt,brown sugar,kashmiri red chilli powder and turmeric powder..

  3. Place the pan with the cooled mustard oil on medium heat.Add asafoetida and onions.Saute and cook until onions turn brown..

  4. Add curry leaves,ginger paste,garlic paste,green chillies and ground pickle spices.Saute for 5 minutes..

  5. Add mutton and saute on high heat until mutton starts to turn brown..

  6. Turn heat to simmer, add the yogurt-spiced water,cover with a tight fitting lid and cook until mutton is 3/4 done..

  7. Add the chopped tomatoes, mix through,cover and cook until mutton is tender and cooked through..

  8. Remove lid,increase heat to high and cook until all the water has dried up and the desired consistency is reached..

  9. Add a dash of lemon juice..

  10. Remove to a serving dish,garnish with chopped coriander leaves and serve hot along with Indian flatbread..
