Boondi mint masala raita. Boondi Raita is one of the most easiest recipe. It is served as cooling dip basically made up with curd/yogurt and besan boondi. It can be served with chapati, prantha ,pulao or biryani.
Here I am going to share recipe of Boondi Raita with step by step instructions and pictures with all tips.
Boondi is small pearls of Chickpea flour which are deep-fried in oil till crispy and crunchy.
When added in yogurt, these soak up the liquid and becomes soft.

Ingredients of Boondi mint masala raita

Prepare 1/2 cup of soaked plain salted boondi.

You need 1 cup of curd.

Prepare 1/2 table spoon of chaat masala.

You need 1/2 table spoon of bhuna jeera powder.

You need 1/4 table spoon of red chilli powder.

It’s 1/4 table spoon of black salt.

It’s of normal salt as per taste.

You need 1 of chopped green chilli.

Prepare 1 pinch of hing for tadka.

You need 1 table spoon of oil for tadka.

You need 1/4 spoon of cumin seeds for tadka.

It’s 1/2 of chopped onion for fry.

It’s leaves of some crushed mint.
Boondi is available in most Indian stores and it comes in a variety of flavors like mint, masala, etc.
I prefer to use plain boondi to make Raita and add the masalas in the yogurt.
Boondi raita is very easy to make.
You can serve it with any North Indian dish.

Take a bowl and add curd and whisk it after it add all spices except tadka spice. and mix well than add soaked (& drained water boondi)..

Now take a big spoon and heat oil than add cumin seeds and hing until it turn brown than add chopped onion and fry it until light brown. and pour it on raita and cover it with plate for 2 minutes at last add crushed mint and chopped green chilli. raita is ready.serve it cool..
But mostly this raita goes very well with rice dishes like biryani or pulao and they actually pep them more.
I served this spiced boondi raita with biryani rice along with an aubergine/brinjal curry.
I have used cashew yogurt to make it but you can use normal curd also.
