My Chorizo and Chili Beef Bake with Homemade Chips ๐Ÿ˜Š. An easy recipe for beef & chorizo chili that will have everyone scraping their bowls. This is the best chili I've ever made in my life! It's packed with smoky, tangy & slightly spicy flavors.

It's almost too much to handle but I'm going to try by making this beef and chorizo chili featuring some of my homemade fresh Mexican chorizo.

The chorizo is so easy to put together and adds an extra level of flavor to the chili.

I did make modifications based on what I had in the pantry.

  1. Prepare of onion, chopped.

  2. It’s of minced Beef.

  3. It’s of Chorizo sliced.

  4. It’s of Salt & Pepper.

  5. You need of red chilies, sliced or mashed very small.

  6. Prepare of chopped tomatoes.

  7. Prepare of Beef boulion or cubes.

  8. It’s of Tomato puree.

  9. Prepare of olive oil.

  10. You need of garlic crushed.

  11. It’s of green chilli chopped small.

  12. Prepare of Sweet Red Pepper.

  13. You need of boiling water.

Slice the potatoes thin on a mandoline.

Run under cold water until the water is clean.

Serve with avocado, sour cream and cilantro.

My version of a Trader Joe's meatless recipe - Slow Cooker Ground Beef and Chorizo Chili.

  1. Heat oil in a deep fry pan or Wok, which i mainly use, and fry onions for 2 minutes then add garlic.

  2. Add the crushed chili and fry for 1 minute.

  3. Addi the beef to the fry and cook until the beef has no red colour.

  4. While the mince is frying cut your chorizo into slices and add to the fry..

  5. Add the tomatoes to the fry and stir in, add salt pepper and water then the beef cubes stir then turn down the heat and simmer for 10 mins..

  6. Transfer to a casserole dish or ovenproof dish and bake on gas 6 or 170ยฐC for 45 minutes ..

  7. Add the chopped red peppers and tomato puree, stir in just before serving so you have a crunchy texture instead of soggy peppers..

  8. Serve with lovely thick homemade chips, or fries, serve in bowls and chips on side for dipping, in your chili bake..

This last week has been crazy.

In a large bowl, combine chili paste and ground pork.

Using a spoon or sturdy spatula, mix pork and paste until well combined.

You can also use a stand mixer with a paddle attachment to mix pork and chili paste.

Cook chorizo in a hot skillet until done, or transfer chorizo to a resealable plastic bag and freeze until ready to use.
