Recipe: Eating on a Dime Phulkopi,aloo diye Chhanar Dalna Delicious, fresh and tasty.

Phulkopi,aloo diye Chhanar Dalna. Dalna or gravy curry is very famous among Bengalis and there are various types of dalna that we, the Bengalis, prepare. Dalna is a star of Bengali vegetarian kitchen and typically prepared without onion and garlic. Among all the other forms of dalna, Aloo Phulkopir Dalna is probably the most easy one and yet, it is utterly delicious and rich in taste.

Each time we get prawns at home my dad wants me to make this and each time I side-track the request, because, well I never had it!!

Today's Alu Phulkopir Dalna – potato and cauliflower curry, is a similar dish where addition of some succulent prawns transfers it from a vegetarian delight to a non-vegetarian dream of Chingri Aloo Phulkopi'r Dalna.

You can cook Phulkopi,aloo diye Chhanar Dalna using 24 ingredients and 14 steps. Here is how you achieve that.

Ingredients of Phulkopi,aloo diye Chhanar Dalna

  1. Prepare of To make cottage cheese dumplings/ chhana balls-.

  2. It’s 2 cups of cottage cheese/ chhana.

  3. It’s 1 tbsp of maida.

  4. It’s of Few pinch turmeric powder.

  5. It’s to taste of Salt.

  6. It’s of To make the cottage cheese-.

  7. It’s 2 litre of whole milk.

  8. It’s 3-4 tbsp of lime juice.

  9. You need of To make the gravy-.

  10. Prepare 2 of potatoes cuts into small cubes.

  11. You need 1 of cauliflower cuts into medium sized florets.

  12. You need 1 of tomato cuts into small cubes.

  13. You need 1/4 tsp of cumin seeds.

  14. You need 2 of bay leaves.

  15. You need 1 tsp of Kashmiri red chilli powder.

  16. It’s 1 tsp of cumin powder.

  17. You need 1/2 tsp of turmeric powder.

  18. It’s 2 of green chillies(splitted).

  19. Prepare 1 tsp of ginger paste.

  20. Prepare 1/2 tsp of sugar.

  21. It’s 1/2 tsp of garam masala powder.

  22. You need 1/2 tsp of ghee.

  23. It’s 2-3 tbsp of refined oil.

  24. Prepare of as required Chopped coriander leaves for garnishing.

I make this potato cauliflower dish along similar lines. "P hulkopi" (cauliflower) used to be strictly a winter vegetable in my childhood.

We used to wait for the first "phulkopi" of the season.

However. at the beginning of phulkopi-season, ma used to make simple dishes with it.like "niramish phulkopir daalna matarsuti diye" or "phulkopi alu diye macher jhol". and by end of the season she used to make many other dishes.

Phulkopi,aloo diye Chhanar Dalna step by step

  1. Heat the milk, when it starts to boil, simmer the flame & add the lemon juice. Stir well..

  2. Heat until the water clearly separates from the milk. Switch off the flame & let it cool for few mints..

  3. Then put the cuddle milk in a strainer. Collect the chhana after removing the excess water on a.bowl or plate..

  4. For making the chhana or cottage cheese balls knead the chhana or cottage cheese with 1 tbsp maida/ refined flour,turmeric powder & salt..

  5. Heat oil in a kadhai & put the cottage cheese balls carefully into the oil. Fry them until golden brown. Keep them aside..

  6. In the same oil fry the cauliflower florets & then the potatoes until those turn golden brown& keep them aside..

  7. Now in the oil add cumin seeds, bay leaf. Wait for them to crackle..

  8. Add chopped tomatoes, slitted green chillies, turmeric powder, cumin powder, ginger paste red chilli powder, salt & saute until the oil separates..

  9. When the gravy starts leaving oil from sides add water & sugar.Add the fried cauliflower florets & potato pieces..

  10. Simmer & cook for 5 mints on low flame till the vegetables soften..

  11. Lastly, add the fried chhana balls / Cottage Cheese balls into the gravy & mix them very gently..

  12. Cook for another 2-3 mints till desired consistency or the aroma comes from the gravy..

  13. Add ghee,garam masala powder & mix it well with the Dalna. Then switch off the flame..

  14. Garnish it with chopped coriander leaves.& serve it hot on a serving plate with luchis, parathas or rice..

A traditional Bengali preparation of Cauliflower and Alu usually served with rice or roti.

Chanar Dalna is a signature Bengali dish prepared with Cottage Cheese or CHANA.

For this dish, I prefer to follow my mother's recipe.

Simple light but tasty gravy with Chana and potato.
