Made from beef, pork, chicken and even fish, the minced meat is seasoned, formed into small cutlets (kotleti) and pan fried to perfection.
Today's post is one of my favorite Russian meatballs recipe called chicken kotleti.
They're super moist and tender and can be enjoyed either warm or chilled.

Kotletis don't look like traditional round meatballs, but more of flattened round meat patties or hamburgers.
Making kotlety with a panini press is far from the traditional Russian recipe, but so wonderfully convenient and efficient if you don't have a huge even cooking skillet you can cover.

In a bowl put chopped bread slices and pour milk over it until the bread soaked in milk and wait 2-3 minutes..

Mix into the bread a whole egg and onion. Mix it well with a hand blender until it is smoothly combined..

Combine the beef and the bread mixture together and mix it well..

Add dill and all the spices to taste. I also added 1/2 teaspoon of garlic powder, its optional..

Shape the meatballs and fry with oil on a medium heat until fully cooked..

I love the idea of the added potato ??.
My mom always used to add the bread soaked in milk or breadcrumbs when she made rissoles or meatballs a very good trick.
Kotleti are a really traditional Russian dish and should be part of your Russian cuisine repertoir (if having a Russian cuisine repertoir was something you were into ).
My mother-in-law said they kind of tasted like large meatballs.
I guess that means that the flavor profile should be familiar to you and you shouldn't be scared to make them!
