Recipe: Delicious Undhyui puri Delicious, fresh and tasty.

Undhyui puri. Surti undhiyu is a variant that is served with puri at weddings and banquets. Again it is a mixed vegetable casserole, made with red lentils and seasoned with spices, grated coconut, and palm sugar in a mild sauce. It is garnished with chopped peanuts and toasted grated coconut, and served with rice.

Basically,it is a mixed vegetable curry.

We cook it slowly in green pesto.

Eat it with fried flat bread.

Ingredients of Undhyui puri

  1. Prepare 250 gm of brinjal.

  2. You need 200 gm of small potatoes.

  3. You need 250 gm of kandh/purple yam.

  4. Prepare 250 gm of surti papdi.

  5. You need 10-15 of methi pakodas.

  6. Prepare 1 cup of scraped coconut.

  7. It’s 1 cup of coriander leaves.

  8. It’s 3 tbsp of ginger garlic green chilli paste.

It makes a heavenly combination when served with 'Shrikhand'.

Traditionally you serve it with dollops of white butter or 'ghee'/clarified butter.

However, you can also make it vegan by just avoiding ghee in.

Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. and special occasions like marriage parties.

Undhyui puri step by step

  1. Take all ingredients for marinating kandh/surti papadi. In gujrati marinating means "handovanu". Mix all masalas and kandh and surti papdi and handavu for 10-15 mins..

  2. Now cut the brinjals and potatoes and fill it with the masala prepared for filling..

  3. Now take all ingredients and mix and make a thick batter to make methi pakodas.

  4. Now heat oil in a kadai, add the kandh and surti papdi layer, then with brinjals and small potatoes. Now cover and cook on slow flame. Make the pakodas and when the sabji is cooked, add the pakodas. Mix well and cover and cook for 5 mins. When done, serve with puri and rice..

This deliciously rich curry is usually enjoyed in winter as veggies like fenugreek leaves, surti papadi and tuvar lilva.

Undhiyu is served with poori or bajra bhakri.

It can be eaten with phulka roti as well.

On Makar Sankranti festival, the meal consists of undhiyu, puri, chutney and jalebi.

This meal is a must in most families in Gujarat.
