Mango cake. The cake to me didn't seem to taste much different from a regular yellow cake besides being a little more dense from the mango. The glaze was the best part. A delicious way to use my favorite fruit.
The cake is made with fresh oranges, limes, and mangos, which are sold by the ton at the family fruit stand.
The cake tastes as bright and sunny as a day in Florida and makes a delicious treat any time you can find good, ripe mangoes.
Cake: Position a rack in the center of the oven.

Ingredients of Mango cake

You need 1 cup of mango pulp.

It’s 1/2 cup of sugar.

Prepare 1 cup of fine semolina.

It’s 1/4 cup of oil.

Sift the flour, baking powder and salt into a large bowl.

In a bowl add mango pulp, semolina and sugar. Mix all three ingredients. Once mixed add oil and mix until its incorporated. Let it stand for 10 minutes..

After 10 minutes add the baking soda and baking powder and mix. The mixture will be nice and fluffy. If it looks dry add a couple of tablespoon of milk. Transfer in a greased tray and bake in oven for 25 to 30 minutes on 160 degrees. Check with a prick stick. If it comes out clean your cake is done. Let it cool. Remove and serve..
