  1. You need of Mango pudding layer.

  2. Prepare 250 ml of mango puree.

  3. Prepare 10 gm of china grass/agar agar.

  4. You need 4-5 tbsp of sugar.

  5. Prepare 250 ml of milk.

  6. You need as needed of Water soak chinagrass.

  7. You need of Milk pudding layer.

  8. You need 250 ml of Milk.

  9. You need 5 gm of china grass/agar agar.

  2. Boil 250ml milk.. Boil on low to medium flame for about 4-5mins till lightly thickens, and then add sugar. Stirr till the sugar dissolves and turn off the flame..

  3. Now cook the soaked china grass stirring continuously till it starts boiling. Keep stirring till it thickens and china grass is fully dissolved..

  4. Now add the China grass mixture to the previously boiled milk and keep stirring on low flame till well mixed. Turn off the flame and set aside..

  5. To the above mixture add mango puree and mix it well. Divide this into two equal parts. Keep one for later..

  6. Now pour one portion into a container and refrigerate it for 5-10mins..

  7. For milk pudding layer follow the same process as in step 2, 3 and 4. Pour this mixture on the top of the previous mango pudding layer and again refrigerate it for 5-10mins..

  8. Use the other half mango pudding mixture (step 5). Heat it on stove for few mins to dissolve and pour on the milk pudding layer and again refrigerate it. (Note: as we had kept the remaining mixture aside in step 5, it would have already formed into a pudding so we need to heat it before pouring in our container).

  9. Plain pudding layer: follow the same process of step 2, 3 and 4. Pour the mixture onto the 3rd layer. Now before we refrigerate it we have to garnish it with a mango flower. Let it set for 20mins. Your mango pudding is ready to serve..
