Ingredients of Bengali 's Sweet Mango Aachar

  1. It’s 500 gms of Raw Mango,cut into small cubes.

  2. Prepare 300/400 gms of powder sugar (depending upon the sweetness u want).

  3. You need 1 tbsp of Kalonji seeds, half crushed ( nigella seeds).

  4. Prepare 1 tbsp of Meethi seeds, half crushed ( fenugreek seeds).

  5. You need of (If you have phanch foron u can add 1&1/2tbsp.

  6. You need of Only half crush it.In this case u can omit the other masala ).

  7. Prepare 1 tbsp of chilli flakes.

  8. Prepare according to taste of Salt.

  9. Prepare as needed of Kashmiri chilli powder, for colour (optional).

Bengali 's Sweet Mango Aachar step by step

  1. Cut the mangoes into small cubes, and wash properly. Now add the powder sugar, and mix properly. Cover and keep aside for 2 hours..

  2. After 2 hours, put a pan on the flame, and put all the marinated mangoes in it.Cover and cook on slow flame,till the mangoes are done..

  3. Once done,add all the crushed masala and salt, and stir with a light hand,making sure, that the mangoes does not break.Add chilli flakes. Kashmiri chilli is optional. You can add for a nice colour..

  4. Keep stirring till all the masala gets mixed properly, and the sugar syrup becomes little thick. Because when it will becomes cool,the sugar syrup will set, but dont let it become too thick.It should be semi liquid in consistency. Check seasoning. Now allow to cool completely, and store in a clean glass bottle..

You can also enjoy this mango pickle with plain roti and parathas.
