  1. Prepare of thin-cut steak strips very thinly sliced.

  2. You need of cornflour.

  3. You need of Chinese five-spice powder.

  4. Prepare of olive oil.

  5. It’s of red pepper, thinly sliced.

  6. You need of red chilli, thinly sliced.

  7. It’s of spring onions, sliced, green and white parts separated.

  8. You need of garlic cloves, crushed.

  9. Prepare of thumb-sized piece ginger, cut into matchsticks.

  10. It’s of rice wine vinegar or white wine vinegar.

  11. You need of soy sauce.

  12. You need of sweet chilli sauce.

  13. It’s of tomato ketchup.

Add the beef to the sauce, season with a pinch of chilli flakes, Chinese five-spice salt and sesame seeds.

Top with some pickled carrots, garnish with viola flowers, if using, and serve.

Take half the beef strips and toss them with the corn flour.

Crispy chilli beef instructions

  1. Add steak strips in a bowl and toss in 3 tbsp cornflour and 2 tsp Chinese five-spice powder..

  2. Heat oil in a wok or large frying pan until hot, then add the beef and fry until golden and crisp.

  3. Scoop out the beef and drain on kitchen paper or plate. Pour away all but a little of the existing oil..

  4. Add 1 thinly sliced red pepper, ½ thinly sliced red chilli, sliced white ends of 4 spring onions, 2 crushed garlic cloves and thumb-sized piece ginger, cut into matchsticks, to the pan. Stir-fry for 3 mins to soften, but don’t let the garlic and ginger burn..

  5. Mix the 4 tbsp rice wine vinegar or white wine vinegar, 1 tbsp soy sauce, 2 tbsp sweet chilli sauce and 2 tbsp tomato ketchup in a jug with 2 tbsp water, then pour over the veg..
