Recipe: Yummy Pasta Upma Delicious, fresh and tasty.
Pasta Upma. I tried a smiliar 'upma' type preparation with my leftover cooked pasta and it worked great. Didn't prepare any sauces, just tossed pasta in veggies and chilli powder. I have used Penne however you can try this recipe w Pasta Upma recipe.
Upma is always a big no in my house but this one and the idly upma is exceptional.
My son who is a picky eater and doesn't like to take Indian lunch box dishes likes this fusion upma.
As he prefers pasta without cheese and pasta sauce I make masala pasta and upma once in a while for his lunch box.
You can have Pasta Upma using 14 ingredients and 3 steps. Here is how you cook that.
Ingredients of Pasta Upma

It’s 1 cup of pasta, boiled al dente.

Prepare 1 cup of mixed veggies, cut lengthwise.

It’s As required of (beans, carrot, beetroot, peas, red cabbage, potato, etc).

It’s 2 tbsp of oil.

It’s 1/2 tsp of mustard seeds.

It’s 1 tsp of urad dal (split black gram).

Prepare 1 sprig of curry leaves.

Prepare 1 of onion, chopped.

It’s 1-2 of green chilies, chopped.

Prepare 1 tsp of grated ginger.

It’s to taste of salt.

It’s 1 tsp of coriander powder.

You need 1 tsp of sambar powder.

Prepare 1 tbsp of coriander leaves, chopped.

How to Make Mixed Vegetable and Angel Hair Pasta Upma.
Cook the pasta as per the package instructions.

Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the urad dal, onion, ginger, green chilies and curry leaves..

Saute till light brown. Add the veggies and all the dry spices. Give it a stir and add 1/2 cup water. Cover and simmer till the veggies are cooked..

Now add the boiled pasta. Stir fry for 2 minutes and switch off the flame. Garnish with coriander leaves and serve for breakfast / snack along with some chutney..

When the seeds splutter, add urad dal, hing, curry leaves and grated ginger and fry for a few minutes.
Add the onions and green chillies and cook until the onions are translucent.
