  1. You need of buckwheat flour.

  2. It’s of ground cinnamon.

  3. You need of ground ginger.

  4. You need of ground cloves.

  5. You need of baking powder.

  6. Prepare of sea salt.

  7. Prepare of lemon juice.

  8. Prepare of coconut oil, melted.

  9. You need of maple syrup.

  10. It’s of water.

  11. You need of ripe bananas - mash 3 and slice 1.

  12. You need of dates, chopped.

  13. Prepare of walnuts, roughly chopped - optional.

Banana Bread - vegan and GF instructions

  1. Preheat the oven to 190C..

  2. Combine the flour, baking powder, spices and salt..

  3. Add the lemon juice, water, coconut oil and maple syrup. Mix well..

  4. Add the mashed bananas. Mix well..

  5. Stir in the dates and the walnuts if using..

  6. Put into a loaf tin - lined if it’s not a silicone one. Put the banana slices on top as decoration..

  7. Bake for about 50 mins - until golden. It’s ready if you put a skewer in and it comes out clean. Enjoy 😋.

Gluten free flour → I use a blend of quinoa flour and oat flour, but I also love using garbanzo bean flour, which adds a little plant protein.
