Fried Yam/Ripe plantain,egg sauce and fried mackerel fish. Fried yam is a very common street food found in every corner of the road side in Ghana where I grew up. It is mostly enjoyed with some freshly grounded peppe. Add your fried potatoes and chopped green pepper and stir.

This is my easy recipe for fried ripe plantains or platanos maduros fritos, a must-have side dish for so many Latin dishes.

I experienced overexposure to plantains when I was growing up (and it was great!).

Coat each piece of plantain with a little butter.

Yam and Plantain Pottage also known as Yam and Plantain Porridge is a yummy fusion of Yam, Plantain and Tomato stew.

It's a yummy take on the popular Yam pottage also known as Asaro in Nigeria.

Some people prefer to have just the plantain pottage on it's own but I prefer the blend of Yam and Plantain to the plain Plantain Pottage as the sweetness of the Plantain isn't as potent.

  1. Wash and slice ur tomatoes,peppers and onions and set aside..

  2. In a pot,heat up oil,add ur tomatoes,onion,curry,thyme,ginger,garlic,knorr,salt and pepper and simmer for a few mins..

  3. Break ur eggs, whisk and add to d tomatoes sauce on fire,stir after a few mins to combine everything.simmer for a min and ur egg sauce is ready..

  4. Serve with ur already fried yam and ripe plantain..
