Brinjal Raita. Couple of years ago when my cousins visited us, their acquaintance invited us for dinner. It was a delicious dinner and on the menu was brinjal raita. It was the first time I ever tasted it and was awesome.

It is easy to make and tastes very delicious.

It can be had as a side dish for parathas, rotis, sambar sadam and even biryani.

Today we will learn how to make brinjal yogurt raita following this easy recipe.

Ingredients of Brinjal Raita

  1. You need 2 cups of curd.

  2. Prepare 1 of small brinjal.

  3. You need 1/2 tsp of red chilli powder.

  4. Prepare 1/2 tsp of chat masala.

  5. Prepare 1/2 tsp of black pepper powder.

  6. You need 1 tsp of cumin and mustard seeds.

  7. It’s Pinch of hing.

  8. You need 1 tsp of oil.

  9. It’s 1 of small onion sliced.

  10. Prepare 1 of green chill.

  11. Prepare Few of Curry leaves.

  12. Prepare to taste of Salt.

  13. Prepare as required of Coriander leaves for garnishing.

Brinjal raita is a delicious and humble dish made with yoghurt or curd, fried brinjal, spices and herbs to add a zing to the dish.

It is mildly spiced, subtle and outrageously delicious.

It goes excellent accompanied with roti, paratha, naan or rice.

Brinjal combined with yoghurt makes a healthy combination as Brinjal is a low calorie and fats but rich in soluble fiber content.

Brinjal Raita step by step

  1. Wash the brinjal and cut into small pieces..

  2. Take oil and shallow fry the brinjal and put aside..

  3. Take a bowl and whisk the curd, add red chilli powder, chat masala, salt, black pepper powder, and mix well..

  4. After that put the shallow fry brinjal on top..

  5. For tempering take another pan and take some oil. Once the oil is heated add mustard cumin seeds once it starts to crackle add curry leaves now add hing and sliced onions. Sauté until golden brown..

  6. Now put all of this on top of the curd..

  7. Garnish with coriander leaves..

  8. Enjoy your raita in lunch or dinner..

Smear the pieces with salt, chilli powder and turmeric powder.

Heat a pan and pour ¼ cup oil.

Drop the brinjal pieces in the oil and deep fry them.

Now, in a flat bowl, layer the fried brinjal pieces.

Spread the set curd over them.
