Recipe: To Try At Home Steam Pumpkin Curry

Recipe: To Try At Home Steam Pumpkin Curry Delicious, fresh and tasty.
Steam Pumpkin Curry. Pour the curry into a large serving bowl. Let everything come to a gentle boil, simmer covered until pumpkin is tender. I love curries, I literally cook curry at least once a week.
At this time, also taste and adjust the flavor of the sauce/broth as needed.
I added more maple syrup for sweetness, sea salt for saltiness, and a bit more curry paste for a more intense curry flavor.
Put your rice on to cook.

BTW, in Trinidad and Tobago this pumpkin recipe is usually called "Pumpkin Talkari" and it's a hit at many of the Hindu homes and celebrations since it's a vegetarian dish that's full of goodness and simply amazing with roti.
Add cooked cubed pumpkin, coconut milk, brown sugar, turmeric and pinch of salt and bing to simmer, then add chickpeas and lemon juice.
That's why I loaded up this Pumpkin Curry with tons of Broccoli, Carrots, Sweet Potatoes, Caramelized Red Onions, and Bell Peppers.
The secret to perfectly crisp veggies?
We'll add the Sweet Potatoes, Bell Peppers, and Carrots to the simmering Pumpkin Sauce first, as they take longer to cook.
