To make aloo pakora, combine the besan, rice flour, chilli powder, turmeric powder, asafoetida, carom seeds, coriander, warm oil, baking soda, salt and approx. ¾ cup of water in a deep bowl and mix well using a whisk till smooth.; Heat the oil in a deep non-stick kadhai, dip a few potato slices in the prepared batter and drop it in hot oil.

  15. Prepare As required of Water.

  16. It’s As required of Oil for deep frying.

This helps in keeping the pakora batter smooth and lump free.

In a medium sized wok, bring oil to heat.

The oil should be neither too hot or cold.

  1. Firstly wash the potatoes well and peel them..

  2. Then with the help of a slicer slice the potatoes to thin slices.Then put them in water so that it doesn’t turn black..

  3. Now in a big bowl put the gram flour and rice flour and dry ingredients except water..

  4. Then add the chopped coriander leaves and water and mix well.

  5. Remove the potatoes and put in a kitchen towel /cloth and dab it dry..

  6. Now heat a Kadhai and put oil..

  7. Now put the potato slices in the besan batter and mix well..

  8. When the oil is hot add the potatoes dipped in the batter in the oil and fry them till nice and crisp. Remove on an absorbent paper..

  9. Serve hot with ketchup and tea..
