Pear, Almond and Semolina Cake. Great recipe for Pear, Almond and Semolina Cake. I had lots of thick skinned but sweet and juicy pears, and they needed somewhere to go, other than into the juicer. This is what I came up with.

Transfer to the prepared cake tin an dlevle off.

Slice each pear quarter in half and arrange decoratively on top of the cake.

This almond and pear cake has finely ground almonds and fresh pear slices soaked in amaretto liqueur creating a delicate cake for the fall season.

Ingredients of Pear, Almond and Semolina Cake

  1. Prepare 8 small of ripe, juicy pears.

  2. You need 3/4 cup of margarine or softened butter.

  3. It’s 2/3 cup of soft light brown sugar, any lumps squashed.

  4. It’s 1 cup of self-raising flour (or all purpose flour + 1/2 tsp baking powder).

  5. You need 1 cup of semolina.

  6. It’s 1/2 tsp of baking soda.

  7. It’s 3 large of eggs.

  8. You need 1 tsp of almond essence.

  9. Prepare 1/2 cup of flaked almonds.

  10. It’s 1 of squeeze of lemon juice.

Put the flour, sugar, butter, eggs, baking powder and milk in a large bowl.

For a more crumbly, 'cakey' texture, substitute a tiny amount of the almond meal with whole wheat flour.

It will still be an almost flourless pear and almond cake.

Other than the almonds, fresh eggs, a small amount of caster sugar, butter and of course, fresh, just-ripe pears are all that you need to turn out a really nice cake.

Pear, Almond and Semolina Cake instructions

  1. Heat oven to 180 C..

  2. Grease and line a 9*9 inch square cake tin with baking paper.

  3. Peel, quarter, core and place pears into a bowl half filled with water with a squeeze of lemon juice in it..

  4. Beat together the margarine and sugar, until the graininess of the sugar is gone..

  5. Beat in eggs one at a time.

  6. Mix in flour, baking soda and semolina.

  7. Drain and dry the pears..

  8. Mix in the almond essence and the pears.

  9. Scrape all the batter into the cake pan and spread it out to the edges and flatten it out as best you can..

  10. Sprinkle over the flaked almonds.

  11. Bake for 30-35 minutes.

  12. Allow to cool in the tin for five minutes at least. Can be eaten warm or cold..

The first time I made this cake it was a bit of an experiment.

I was in need of a bake and cobbled this semolina cake together from ingredients that I happened to have in the cupboard.

These included a packet of semolina that was almost out of date and some very hard pears from a friend's tree.

I was so pleased with the result.

This lovely pear cake is not a cake with pears in it.
