These are essentially packets made of rice flour dough that are stuffed with a coconut-jaggery mix, and cooked in sweetened milk. Dudh Puli is a famous Bengali milk based Payesh/ Kheer/ Pudding prepared by slow-cooking milk with Puli (also known as rice flour dumplings) stuffed with cooked coconut.
Dudh puli can be described as rice flour dumpling with coconut filling cooked in cardamom and cinnamon infused milk.

Prepare Pinch of salt.

It’s 1 bowl of Sugar.

It’s 1 litre of Milk.

You need 2-3 pinch of Jaiphal or nutmeg powder.

Dudh puli or dudh puli pithe has two variation, one without stuffing and another with stuffing.
Many uses semolina or sooji along with rice flour to make this dudh puli pithe.
It is a very unique styled stuffed dumpling of Bengal.
The stuffing is generally made of coconut and date palm jaggery and the shell is made of rice flour.

Firstly boil the milk and let it on low flame to get thickned..

Meanwhile boil water and off the flame and add salt and rice flour..mix vigourously with spoon and keep aside to cool..

When the flour mixture is cooled down smooth the flour by rubbing with your hands using little oil in between..

Divide the smoothened dough in equal lemon size ball like..

For stuffing-grate apples and mix with 3-4tsp of sugar and in a pan put it over a low flame..stirr continously until juicy part get absorbed and the grated apple gets in dough like consistency..

In another pan saute khoya light pink using oil tsp add dry fruits and off the flame and add apple grated half of the mix..half we hve to add in milk…

To the khoya mixture adjust the sugar taste according to your taste by adding powdered sugar..and add nutmeg powder too..

In a lemon size ball stuff the khoya mix by flattening the dough in your palms placing spoon full of stuffing and sealing up in your desire shape..i hve give gujiya shape sealing the edges with water and using fork..

To the thickned milk add sugar dry fruits kesar elaichi and place the pithas gently and cook until pithas starts floating..

At last add remaining apple mix to the milk and let it take 2-3 boils..off the flame..
