Bitter Gourd is cooked when it is unripe ie; green in golor or just as it turns yellow.

Once it ripens and becomes orange in color, it becomes intensely bitter.

Pavakka Thoran is a traditional Kerala style Bitter Gourd Curry cooked with lots of fresh coconut and in coconut oil for an authentic touch and flavour.

You can have Pavakkai (bitter gourd) thoran using 10 ingredients and 8 steps. Here is how you achieve it.

Ingredients of Pavakkai (bitter gourd) thoran

  1. You need 300 gms of Pavakkai.

  2. It’s 1 cup of coconut grated.

  3. You need 10 pods of shallots.

  4. It’s 4 pods of garlic.

  5. Prepare 4 of green chillies.

  6. You need 1 tsp of mustard seeds.

  7. Prepare ts 1/4 tsp of turmeric powder.

  8. It’s of curry leaves.

  9. Prepare to taste of salt.

  10. It’s 2 tsps of Oil.

Pavakka or Bitter Gourd is a characteristic veggie with a bitter flavor.

Heat a cheena chatti at medium heat.

Splutter mustard seeds and fry dry red chilies.

Add bitter gourd mixture and enough salt.

Pavakkai (bitter gourd) thoran instructions

  1. Wash pavakkai.

  2. Chop into small pieces..

  3. Slice shallots, crush garlic, chop green chillies.

  4. Heat oil in a pan. Add mustard seeds, allow to splutter, add sliced shallots, garlic, green chillies and curry leaves.

  5. Add chopped pavakkai and turmeric powder,  mix well..

  6. Add quarter cup water. Cook in slow flame for abt 15 minutes.

  7. When done add grated coconut, salt and stir  till completely dry..

  8. Bring down, serve..

Add red chilly and fry for sometime.
