Raw Mango Rice (Mango pulihora). mamadikaya pulihora an easy no onion no garlic chitranna recipe, using raw mango and other freshly ground spices. This South Indian rice variety is a perfect lunch box recipe too. Generally the raw mango rice is called as Mango pulihora.

Summers are usually filled with fragrance of raw mangoes and ripe mangoes all across the Indian markets and whenever.

Few Tips to Make the Best Mango Rice: Always use the sour and firm green mango to prepare mangai sadam or mango rice.

Do not use the ripe mango.

You can cook Raw Mango Rice (Mango pulihora) using 15 ingredients and 8 steps. Here is how you cook that.

Ingredients of Raw Mango Rice (Mango pulihora)

  1. Prepare 200 gm of rice.

  2. You need 400 gm of water (we use 2 cups of water for every 1 cup of rice).

  3. You need 1 of raw mango.

  4. It’s 3-4 of green chillies.

  5. It’s leaves of curry.

  6. Prepare bunch of peanuts.

  7. Prepare 2 tbspn of cashew.

  8. Prepare 1/4 tbspn of turmeric powder.

  9. It’s of salt as per taste.

  10. You need 1 of tbpsn chana dal.

  11. You need 1 tbspn of urad dal.

  12. You need of cummin seeds.

  13. You need of methi seeds.

  14. It’s pinch of hing.

  15. You need of jeera.

The quantity of the mango depends on the sourness.

Always spread the cooked rice on a wide plate to separate the grains.

Do not skip adding hing / Asafoetida.

Apart from the Mango Rice/Andhra Special Mamidikaya Pulihora, I also end up making one or two mango-based pickles every year.

Raw Mango Rice (Mango pulihora) step by step

  1. Wash the rice. add the water and rice to pressure cooker and pressure cook it for 2-3 whistles. Switch off the flame.

  2. Once the steam is gone, make sure you mix the rice properly in the cooker so that it doesnt stick.

  3. Take the raw mango, peel it and use a medium size grater to grate the mango. Keep the grated mango aside.

  4. Take big pan or kadhai, add oil to it. First add groundnut and cashew and saute it well till they get brown. Once done, keep them aside.

  5. Now Add jeera, cummin seeds to the pan and saute it well. Now add chana dal, urad dal, green chilli (cut into small pieces) hing and curry leaves. Saute it well. Add haldi and salt as per taste.

  6. Add grated mango to the mixture. Add the cashew and groundnut to it. Mix it well for 2-3 mins.

  7. Now you can add the rice to the pan. Mix it properly so that the masala gets mixed properly. Keep the mixture on low flame for 2-3 minutes..

  8. Your mango pulihora or mango rice is ready Serve it hot.

Another staple while the raw mangoes last is Mamidikaya Pappu/ Mango based Dal.

With hot rice, ghee and fryums on the side it is one of the most delicious combinations.
