The best thing is that if you have semolina flour & mango pulp (or mangoes) at home, you can easily & quickly prepare this simple, easy & delicious semolina cake with mango flavor. In a bowl, mix the semolina, flour, sugar, melted butter, yogurt, mango pulp and saffron, and mix well.

The speciality of this recipe is no flour is used, I know many of you may be wondering a cake recipe without flour? semolina/sooji/Rava is used here to prepare this yummilicious treat.

This is a great snack/tiffin/dessert option.

Ingredients of Mango semolina cake

  1. It’s 1 cup of Semolina/Rava/Sooji (I used the fine variety).

  2. You need 1 cup of Mango pulp (ready made/canned/fresh mango pulp——-i used canned).

  3. You need 1/4 cup of oil- Any (i used canola oil).

  4. Prepare 3/4 cup of Sugar.

  5. Prepare 1 teaspoon of Baking powder.

  6. Prepare 1/2 tsp of ground cardamom (elaichi).

  7. It’s 1/4 cup of chopped nuts for garnish,i used almonds.

Mango semolina cake step by step

  1. Pre-heat the oven to 170 degrees C. Mix Sooji with sugar, cardamom and baking powder..

  2. Next add oil and mix well. Finally add the mango pulp and mix again..

  3. Let it sit for 15 to 20 minutes.

  4. Pour in a greased loaf pan and garnish with nuts..

  5. Place in the oven and bake for 30-35 minutes. Be careful and keep a close watch after 25 minutes..

  6. Check with a toothpick to see if properly baked. If the knife comes out clean then remove immediately. If it is kept for a longer time, the cake will become hard on the top. Allow to cool completely and then cut and serve..

  7. Notes:—-1). Ifyou dont like more rawa u can use half rava half wheat flour or maida.

  8. 2)Please make sure that the mango pulp is thick and not too watery…If you use a pulp that is not thick and if you find that the cake batter is not thick then let is stand aside for 20 minutes, until the mango pulp is absorbed by the semolina..

  10. I made cupcakes also with this came out superb…for cupcakes bake for 20 mins approx..check with toothpick if not done 5more minutes.
