It has been long time I am planning to make Coconut Namoura which I usually get from my favorite middle eastern store.
But didn't make it because it is too much for a one person to finish.
It's flavored with lemon zest that goes great with coconut.

Ingredients of Coconut Semolina Cake

It’s 100 gm of Crushed semolina.

You need 45 gm of Refined flour.

You need 1/2 tsp of Baking powder.

Prepare 1/4 tsp of Baking soda.

Prepare 3 tbsp of Desiccated coconut.

It’s 60 gm of Normal curd.

You need 80 gm of Oil/butter.

It’s 80 gm of Powdered sugar.

You need 2 tbsp of Melted white chocolate.

You need 1 tbsp of Honey(optional).

Prepare 1 tsp of Vanilla essence.

It’s 3 tbsp of or as required Milk.

Prepare 1 tbsp of tutti frutti.

Prepare 1 tbsp of Cashew nut.
Instructions; Mix the coconut, semolina, baking powder and salt and keep aside.
Mix butter and sugar till fluffy.
Add the egg yolks to the mixture and beat again.
It should be like a thick batter.
Coconut Semolina Cake instructions

Firstly preheated the oven at 180°c for 10 minutes..

Take a cake tin and grease it with melted butter. Dust the cake tin with the flour and sift the flour to make it settle evenly on the tin. Shake the tin to remove extra flour and keep it aside..

Take a bowl and add semolina refined flour coconut baking powder and baking soda. Mix well and keep aside..

Now take a deep bowl and add curd and oil/butter and beat them properly..

Add sugar and white chocolate and mix well..

Add honey and vanilla essence and mix well..

Add dry mixture and mix well..

Add milk and set consistency..

Add some tutti frutti and mix well..

Now pour the batter in the cake tin and spread it evenly with the help of spatula..

Garnish it with tutti frutti and cashew nuts and bake it in the preheated oven at 180°c for 30-35 minutes..

After 35 minutes check it with toothpick. If toothpick is clear then take out. Otherwise bake for another few minutes..

Let it cool for 15 minutes and de-mould it..
