Recipe: Perfect Plantain Waffles Delicious, fresh and tasty.

Plantain Waffles. Naturally sweetened with almost-ripe plantains, these waffles are Paleo, Gluten-Free, Grain-Free, Dairy-Free and Nut-Free! This quick and easy Plantain Waffles recipe makes for a great brunch eat! Easily make Plantain Waffles in your waffle maker then top with various waffle toppings from maple syrup to blueberries to sliced almonds.

The look and texture are very similar to grain-based waffles.

The only giveaway that the waffles are made with plantain flour is the telltale taste of plantains when you take a bite.

If you would prefer to reduce the amount of resistant starch and lessen the plantain flavor, feel free to substitute half the flour with cassava starch instead.

Ingredients of Plantain Waffles

  1. It’s 1 of overripe plantain.

  2. Prepare 1 cup of flour.

  3. You need 1/2 cup of milk.

  4. You need 1 tbsp of sugar.

  5. It’s Pinch of salt.

  6. It’s 1 of egg.

  7. Prepare 1 of cksp for frying or cooking spray.

These Plantain Waffles are made from green plantains and bananas!

The green plantains make these waffles light and the bananas add a natural sweetness.

This recipe is allergy friendly (gluten, dairy, seafood, nut, egg, and soy free) and suits the autoimmune protocol (AIP), paleo and vegan diets.

You can use plantain flour or another flour for the plantains if you can't get access to real plantains.

Plantain Waffles step by step

  1. Wash plantain, remove skill and chop into chunks and set aside.

  2. Pour chopped plantain in a blender and blend for about 2 minutes.

  3. Add flour, milk, sugar, salt and egg blend everything together to form a barter remove and pour in a bowl.

  4. Heat up waffle maker and spray cooking spray and pour in a cooking spoon of barter and cover till the cook through.

  5. Do same till you complete the process with the remaining barter; then serve with eggs and baked bean.

  6. Please note you can use same barter to make pancakes as well if you don’t have a waffle maker.

One note about plantain flour - it does provide a little bit more dense and chewy texture and it works best with.

This particular Paleo Plantain Waffle recipe is my husband's all-time favorite.

He loves these waffles above all else, because he likes the fact that only plantains sweeten them (there's no honey, dates or any other natural sweetener in the recipe), that they have a soft and fluffy consistency, that you can eat them by themselves because of how moist they are (although he does add some.

The greener the plantain, the better, for these waffles, but even if they're starting to yellow, the recipe works just fine.

The flavor is a bit weird with fully yellow plantains (I think they're maybe just a bit too sweet, and they tend to singe a bit on the outside) and the texture doesn't work at all with ripe plantains.
