This recipe is allergy friendly (gluten, dairy, seafood, nut, egg, and soy free) and suits the autoimmune protocol (AIP), paleo and vegan diets.

The recipe for sweet plantain waffles turned into a science experiment until I found the best combination for crispy, sweet waffles.

It starts with plantains that are varied in ripeness.

You can have Plantain waffles using 6 ingredients and 4 steps. Here is how you cook that.

Ingredients of Plantain waffles

  1. It’s 1 of plantain.

  2. You need 3 tablespoons of flour.

  3. You need 1 teaspoon of sugar.

  4. Prepare 1/4 of tspn baking powder.

  5. Prepare 1/2 of cup.milk.

  6. You need 1 of egg.

The look and texture are very similar to grain-based waffles.

The only giveaway that the waffles are made with plantain flour is the telltale taste of plantains when you take a bite.

If you would prefer to reduce the amount of resistant starch and lessen the plantain flavor, feel free to substitute half the flour with cassava starch instead.

You can use plantain flour or another flour for the plantains if you can't get access to real plantains.

Plantain waffles instructions

  1. Slice plantain, boil for 3-5 minutes till tender, put in a bowl and mash it.

  2. Add egg, milk, sugar, baking powder and flour.

  3. Mix all together, get your waffle mould put on a baking tray and grease with oil or butter, add the batter and bake for 20mins.

  4. Let cool and Serve.

One note about plantain flour - it does provide a little bit more dense and chewy texture and it works best with.

This particular Paleo Plantain Waffle recipe is my husband's all-time favorite.

He loves these waffles above all else, because he likes the fact that only plantains sweeten them (there's no honey, dates or any other natural sweetener in the recipe), that they have a soft and fluffy consistency, that you can eat them by themselves because of how moist they are (although he does add some.

Sweet Potato Plantain Waffles will turn out best when using a green-yellow plantain.

A more ripe plantain will work but the texture will be a little different (more sticky) and the flavor a bit sweeter.
