Recipe: Appetizing Diwani Handi Delicious, fresh and tasty.

Diwani Handi. Diwani handi is a classic authentic royal vegetable preparation coked in a handi. The vegetables are tossed together with ginger, garlic paste and select masala powders. Once the vegetables are almost cooked add chopped coriander leaves and green chillies.

Boiled vegetables are cooked with ginger garlic paste and served with hyderababdi parantha.

Diwani Handi is widely popular in many Indian restaurants where it is cooked in many ways, especially in a thick and a rich, creamy based gravy.

But if you are looking for a simple homemade style, then do follow my recipe.

You can cook Diwani Handi using 17 ingredients and 8 steps. Here is how you achieve it.

Ingredients of Diwani Handi

  1. You need 1 cup of each of chopped mixed veggies (Carrot, radish, beans, cauliflower, green peas, eggplants).

  2. Prepare 2 tbsp. of oil.

  3. You need 1 of " cinnamon stick.

  4. Prepare 2 of green cardamoms.

  5. You need 1 tsp. of cumin seeds.

  6. It’s 1 of onion, sliced.

  7. You need 1 of " ginger.

  8. Prepare 2-3 of garlic cloves.

  9. Prepare 1 of tomato, chopped.

  10. Prepare 2 of green chilies, slit.

  11. Prepare 1-2 bunches of fresh fenugreek leaves, chopped.

  12. Prepare to taste of salt.

  13. You need 1/2 tsp. of turmeric powder.

  14. It’s 1 tbsp. of roasted coriander-cumin powder.

  15. It’s 1 tsp. of garam masala powder.

  16. It’s 1 tsp. of red chili powder.

  17. You need 1 tbsp. of dried fenugreek leaves (kasuri methi).

Relish it with naan, tandoori roti, kulcha, roomali roti, plain biryani, jeera rice or pulao. #Ramadan entry Handi is the type of vessel that is used in India for cooking many dishes.

The dishes made in handi are named in that way e.g. veg handi or handi pulao.

I do not have such handi to cook in, so here I have used regular pan.

You will find this veg diwani handi in many north indian restaurants' menu.

Diwani Handi step by step

  1. Heat oil in a handi / kadai / pan and temper with cumin seeds, cinnamon and cardamoms..

  2. Give it a stir and add the onions. Saute till it is light brown..

  3. Make a paste of the ginger and garlic. Mix with all the powdered spices (except salt) along with some water. Now add the spice paste and fry on a medium flame till the oil separates..

  4. Add all the veggies, green chilies and salt..

  5. Mix well and cook, covered for 2-3 minutes. Add the chopped fenugreek leaves and combine everything well. Cover and cook, by stirring at intervals till the veggies are almost done..

  6. Add the chopped tomatoes and continue to cook, covered for another 2 minutes..

  7. When done, add the crushed kasuri methi and mix well..

  8. Switch off the flame and keep it covered for 2-3 minutes. Serve in a clay pot (handi) preferably, as a side dish with naan, tandoori roti, kulcha, roomali roti, jeera rice, pulao or plain biryani..

Salt to taste Diwani Handi is a creamy delicious gravy that has a generous amount of the healthy and green capsicum, fresh and well-cooked baby corn and the tender and natural green peas.

All these veggies are blended so well that it will just make you wonder if you have ever thought high about these humble and healthy vegetables any time before.

The hyderabadi veg diwani handi recipe is a curry which is prepared traditionally with mild spices and rich cashew nut gravy.
