Puli Inji literally translates to tangy ginger.

This is a relish/pickle made with ginger and tamarind.

Ingredients of Inji puli /sweet and sour ginger pickle

  1. You need of Ginger.

  2. You need of Jaggery grated.

  3. It’s of Chilli powder.

  4. Prepare of Coriander powder-.

  5. Prepare of Tamarind pulp -gooseberry size.

  6. You need of Water.

  7. It’s of Salt.

  8. You need of Mustard seeds.

  9. It’s of Dry red chilli.

  10. It’s of +1tsp Coconut oil.

Chilies and a few spices are added to the mix for extra flavor.

Jaggery is used as the sweetener to take the edge of the spices.

Puli Inji is a Traditional Kerala Style Pickle made with tamarind, fresh ginger and green chillies.

Inji puli /sweet and sour ginger pickle instructions

  1. Peel and cut into roundels…

  2. Soak tamarind in water.

  3. In a pan take 2tbsp oil and fry the ginger pieces till golden and crisp.

  4. Crush them using a mixer grinder…..

  5. Into the left over oil add fry chilli powder and coriander powder till you get a nice aroma.

  6. Squeeze the tamarind and discard the pulp.Now pour tamarind juice and grated jaggery. let it come to a boil..

  7. At this stage add the crushed ginger and stir nicely till everything comes together and you get a thick mixture….

  8. In another pour 1tsp oil splutter mustard then add red chillies and curry leaves….

  9. Pour this onto inji puli and mix nicely.

This sweet, sour and spicy pickle or relish is made for sadya meals during Onam and Vishu festival.

Has a good shelf life and stays fresh for long in a refrigerator.
