This is a relish/pickle made with ginger and tamarind.

Prepare of Tamarind pulp -gooseberry size.

Peel and cut into roundels…

Soak tamarind in water.

In a pan take 2tbsp oil and fry the ginger pieces till golden and crisp.

Crush them using a mixer grinder…..

Into the left over oil add fry chilli powder and coriander powder till you get a nice aroma.

Squeeze the tamarind and discard the pulp.Now pour tamarind juice and grated jaggery. let it come to a boil..

At this stage add the crushed ginger and stir nicely till everything comes together and you get a thick mixture….

In another pour 1tsp oil splutter mustard then add red chillies and curry leaves….

Pour this onto inji puli and mix nicely.
This sweet, sour and spicy pickle or relish is made for sadya meals during Onam and Vishu festival.
