9-cup mix veg curry ๐Ÿ˜‹. Mix Veg Curry is made by cooking various vegetables like potatoes, cauliflower, carrots, french beans, capsicum, peas etc. in a spicy onion-tomato & cashew gravy. It is a colorful & healthy curry that can be enjoyed with any Indian bread or rice. Adjust seasoning and serve with rice, fresh coriander/cilantro and chopped chillies (optional).

  1. It’s of potatoes sliced as French fries.

  2. Prepare of green beans.

  3. You need of carrots diced.

  4. It’s of cauliflower florets.

  5. It’s of taro sliced after dried in the sun.

  6. You need of big onion sliced.

  7. Prepare of okra diced.

  8. It’s of mushrooms diced.

  9. It’s of peas.

  10. Prepare of ginger sliced.

  11. You need of garlic sliced.

  12. Prepare of green chilli sliced.

  13. It’s of cumin seeds.

  14. You need of salt.

  15. You need of red chilli powder.

  16. It’s of black pepper.

Mixed vegetable curry is often prepared at home for quick dinner.

I do not follow any particular recipe to prepare this and like to alter the taste of the curry every now and then.

This recipe can be followed to make semi dry curry or gravy.

To make a gravy we can use any spice powder or curry powder or sambar powder.

9-cup mix veg curry ๐Ÿ˜‹ step by step

  1. First for okra and taro a special tip.always dried up in the sun after rinsing and peel off taro.bcuz its so sticky to cut so always put these in sun for at least 30 minutes.

  2. Now deep fry the main vegetables to just soften them not to make golden like fritters.just make soften =carrots,cauliflower,green beans,okra,taro and potatoes.

  3. Now just take 1 tbsp oil because fried vegetables are having enough oil and roast ginger+garlic+green chilli+cumin seeds. After roasting add sliced onion and saute for 2 minutes. Then add all the spices together and cook at low flame for 5 to 7 minutes.roasting spices in only onion mixture gives a wonderful mixture to curry.

  4. After cook 5 to 7 minutes add all the vegetables and just mix gently.donot over mix so fried vegetables should not become so soggy.keep uncover the utensil and cook at medium flame for at least 10 minutes.just after turn off the gas..

  5. Your so yumm mix veg is ready.optional is we can add some fried nuts to.stay safe stay healthy and happy with me.

I added enough water and vegetable stock for the vegetables to cook without pre-cooking, and added peas (good tip).
