Ok so I have visited few bukkas especially amala joints,and I love the fact that they have variety of assortedmeat in there pots,so that prompted me to want to make mine as well.so when I crave it,I just make it instead of going to the bukka. I hope it. " Buka stew", the Queen Bee of Fried Stew!

I promise this recipe will take you back to the first time you tasted this stew.

This is our favourite beef stew recipe.

You can have My bukka style stew using 11 ingredients and 8 steps. Here is how you achieve it.

Ingredients of My bukka style stew

  1. You need 10 of medium size red bell pepper (tatashe).

  2. Prepare 10 of medium sized tomatoes.

  3. It’s 5 of scotch bonnet (rodo).

  4. It’s 1 of large onion bulb.

  5. Prepare 2 of cooking spoon vegetable cooking oil.

  6. Prepare 2 of cooking spoon palm oil (epo pupa).

  7. It’s of Assortedmeat/ofals (kidney,liver,tripe,heart).

  8. It’s of Cow skin (ponmo).

  9. You need of Seasoning cube (I prefer knor).

  10. Prepare 1/2 tsp of Ginger/garlic (minced or grated).

  11. You need of Salt.

They broth is so incredibly flavourful.

It should be noted that the broth is very light and not thick as it is in gravy-type stews, but I still love it.

I usually make it without olives (my husband doesn't like them), and I often add potatoes when we plan to eat it without bread.

Add broth or water if the stew is dry.

My bukka style stew step by step

  1. Wash and smoothly blend all your peppers together with onions.

  2. Clean cow skin in and out,then soak in salt water till you are ready to use.

  3. Wash ofals/assortedmeat very well,then season with ginger,garlic,onions,seasoning cube and salt(cook for about 30-40minutes)because I like it very soft.

  4. Now put a clean pot on the cooker add your palm oil and vegetable oil,when its hot you add chopped ginger,garlic and onions and fry till it's golden brown,make sure it doesn't get burnt then add your smoothly blended pepper.

  5. Now add seasoning cube and salt and cover to cook for about 20minutes.

  6. After 20minutes add cow skin and assortedmeat with a little beat of stock water then cook till oil start to flow on top of the stew.

  7. And my bukka style stew is ready.

  8. So I had mine with amala.

Season with salt and pepper to taste.

Heat olive oil in a large stockpot or Dutch oven over medium heat.

Right up there with my mom's beef stew recipe.

Don't cut the veggies too small when slow cooking and just enjoy.

This would suit most palates I think.
