Recipe: At Home Doodh puli Delicious, fresh and tasty.

Doodh puli. Dudh Puli is a famous Bengali milk based Payesh/ Kheer/ Pudding prepared by slow-cooking milk with Puli (also known as rice flour dumplings) stuffed with cooked coconut. I have grown up having with two different types of Dudh Puli. At my ancestral house, Dudh Puli was always and till date prepared with Notun Gur/ Patali Gur.

Pithi is basically made from rice flour or maida and later cooked in doodh and I'll describe the same while introduce my chusi or choshi pitha recipe.

It is prepared with the date palm jaggery filled with mawa and coconut.

Our family special was and continues to be, doodh puli or rice flour dumplings stuffed with coconut and boiled in thick milk sweetened with date palm sugar.

You can have Doodh puli using 9 ingredients and 9 steps. Here is how you achieve that.

Ingredients of Doodh puli

  1. It’s 2 cups of rice flour.

  2. It’s 1 cup of dessicated coconut.

  3. Prepare 2 of cups​ of date palm jaggery (nalen Gur).

  4. It’s 1/2 ltr of milk(full creme).

  5. It’s 1/2 cup of khoya kheer.

  6. It’s As needed of warm water for kneading the dough.

  7. Prepare 1/4 cup of all-purpose flour.

  8. Prepare 1 t of spoon ghee.

  9. It’s To taste of salt.

I don't remember if it was a holiday but I never went to school on Shankranti.

Doodh puli has a outer shell made with rice flour and is filled with sweet stuffing made with coconut and sugar.

Doodh puli step by step

  1. Knead the rice flour adding salt,ghee and flour to a soft dough.

  2. Prepare a filling with coconut and jaggery (1/2 of the jaggery).

  3. Make a soft dough with salt,ghee rice flour,plain flour and warm water.

  4. Now take small portions of the dough and make small balls.

  5. Flat the balls and keep filling inside of it.

  6. Now fold this to a shape shown in the photo.

  7. After resting steam this puli pitha in a steamer till it gets soft and moist.

  8. Now boil milk add the steamed pulis and boil.

  9. Finally add the remaining jaggery and grated kheer and boil.

Then these dumplings are either boiled in thickened milk.
