Doodh Puli(Bengali Sweet). Dudh Puli is a famous Bengali milk based Payesh/ Kheer/ Pudding prepared by slow-cooking milk with Puli (also known as rice flour dumplings) stuffed with cooked coconut. I have grown up having with two different types of Dudh Puli. At my ancestral house, Dudh Puli was always and till date prepared with Notun Gur/ Patali Gur.
Here are some tricks to make this doodh puli pithe so soft.

At my home my mom used to make pati-shapta and dudh puli (or doodh puli) every year.
She tried making some other types of pithe but I abundantly discouraged her as these were my favorites. 'Doodh Puli' is another delicacy of Bong cuisine that is cooked in every Bengali family during 'Poush Parbon'.
It is a sweet dish which is made of rice flour dough with coconut filling.
You can also use filling made with 'khoya' or evaporated milk or with 'sandesh'.
Doodh Puli(Bengali Sweet) step by step

Keep milk to boil in a pan..

Along with that make the stuffing ready..

Take a pan, add a tsp of ghee. Add coconut and stir on low flame for a minute or so..

Add jaggery and cook till the mixture dries..

Now take rice flour add salt, add hot water little by little and knead the dough.Apply a little ghee on it and cover and keep for 7-8 minutes..

Once the mixture is cooled, add a tsp of cardamom powder on it and mix well..

Make small balls of rice flour dough and add the stuffing to it..

The milk now has also reduced we can add these puli in the boiling milk. Keep on medium flame and let them cook..

Once the flour cooks the puli will come up and float..

Now add around half cup of jaggery and rest cardamom powder and again cook till jaggery melts and cooks well. This would take another 5-7 more minutes..
