Pulihora (puli means tangy or sour in South Indian languages), "Puliyodarai, Puliyogare" or simply "Kokum Rice" or "Tamarind Rice" is a common rice preparation in the South Indian states of Andhra Pradesh, Telangana, Karnataka, Tamil Nadu.

Puli in puliyodarai can be translated as "sour taste", referring to the characterizing use of kokum or tamarind as one of the main ingredients.

Pulihora Recipe is very simple and flavourful rice.

Ingredients of Pulihora (tamarind rice)

  1. You need 1 cup of cooked rice.

  2. It’s 1 tbsp of tamarind pulp(as per taste).

  3. It’s 1 tsp of salt(as required).

  4. It’s 4 tsp of oil.

  5. It’s 1 tsp of mustard seeds.

  6. It’s 1/2 tsp of cumin seeds.

  7. You need 2 of split green chilli.

  8. It’s 3 of red chilli.

  9. Prepare 1/2 tsp of turmeric powder.

  10. It’s 1/4 tsp of asafoetida.

  11. You need 1 tbs of peanuts.

  12. It’s 1/2 tsp of urad dal.

  16. You need 1/2 tsp of methi / fenugreek seeds powder.

  1. Heat 1 tsp of oil in a small pan. Add methi seeds powder and tamarind pulp. Cook till the mixture become thick and oil start separating from the mixture..

  3. Again heat the remaining oil in a pan. Add peanuts then chana dal,urad dal, slit green chillies,curry leaves, red chillies, mustard seeds, cumin seeds and sauté for few minutes. Then add asafoetida and turmeric powder. Sauté it for a minute..

  4. Switch off the gas. Add this tempering to the cooked rice. Mix it well. Pulihora ready to serve..
