Ingredients of Stewed Greengrams- Ndengu Stew

  1. You need 200 g of greengrams.

  2. Prepare 1 of large onion chopped.

  3. It’s 2 of tomatoes chopped.

  4. Prepare 2 cloves of garlic.Crushed or paste.

  5. It’s 1 TSP of grated ginger.

  6. Prepare 1 of green chilli chopped.

  7. You need 1/2 tsp of cumin powder.

  8. It’s 1 handful of coriander.

  9. Prepare 1/4 tsp of turmeric powder.

  10. You need 1/2-3/4 cup of water.

  11. Prepare 2 tbsp of cooking oil.

  12. You need 2 of carrots, cubed and pre- boiled..

  13. It’s 2 of royco cubes.

I don't like alot of spice in my Ndengu, I'd rather have all the natural flavors and taste of the ndengus in my soup.

I got some Pre-Cooked green grams samples from Nairobean.

Here is how you cook that.

Green grams are a legume and they are the main ingredient in the dish and Moses would prepare them in many different ways.

Stewed Greengrams- Ndengu Stew instructions

  1. Wash and soak green grams for at least 4 hours. Over soaking will tend to remove the skin while soaking…

  2. Boil with just enough water and a pinch of salt until completely cooked. When pressed with figures it should be mashed..

  3. Heat oil in a sauce pot. fry the onions until light brown. add ginger and garlic paste while stirring for 2 minutes..

  4. Add tomatoes and all the spice products. Add coriander and stir.. Cook until the tomatoes turn mushy..

  5. Add the pre-boiled green grams and preboiled carrots. Crumble in royco cubes. Add water to the level of the green grams and stir well..

  6. Cover pot and simmer for 5 mins. Taste and adjust the seasoning. Garnish with coriander leaves..

  7. Serve hot with chapati or rice..

  8. You can adjust the consistency of the gravy according to your preferences..

So after I did some research, I realized Moses was making Ndengu Stew.

Green Grams are more commonly know as Mung Beans, and they are high in protein and fiber, hence why we ate them frequently at the house.

Let it simmer for a few minutes and serve while hot with chapati.

Put aside and let it cool before mashing.
