Dudh puli. Dudh Puli is a famous Bengali milk based Payesh/ Kheer/ Pudding prepared by slow-cooking milk with Puli (also known as rice flour dumplings) stuffed with cooked coconut. I have grown up having with two different types of Dudh Puli. At my ancestral house, Dudh Puli was always and till date prepared with Notun Gur/ Patali Gur.

Rice flour dumplings infused with delicious mixture of grated coconut and date palm jaggery and boiled in thickned milk.

Must try recipe. "Dudh" means milk in Bengali and "puli" is another name for pitha.

Dudh puli can be described as rice flour dumpling with coconut filling cooked in cardamom and cinnamon infused milk.

You can have Dudh puli using 5 ingredients and 9 steps. Here is how you cook it.

Ingredients of Dudh puli

  1. It’s 1 bowl of rice flour.

  2. It’s 1/2 cup of date palm jaggery.

  3. It’s 1 cup of coconut desiccated.

  4. Prepare 1 tbsp of ghee.

  5. It’s 1 litre of whole milk.

The coconut stuffing gives a fabulous texture to the soft rice skin with luscious milk sauce.

Dudh puli step by step

  1. Heat ghee and add water to boil.

  2. Add the rice flour and mix well.

  3. Switch off and knead a dough.

  4. Heat jaggery and coconut and mix well switch off.

  5. Cool it down and make small balls of the dough.

  6. Make a hole in it pour the coconut jaggery mixture fold it.

  7. Now boil the milk well adding sugar and add the balls.

  8. Boil it well till it is soft.

  9. Serve it cool.
