Tur dal and channa dal are slow, dry roasted along with red chillis and cumin seeds and finely ground to a coarse powder and finished off with asafoetida and salt.

It’s 1 small cup of Toor dal/pigeon peas.

You need 1small cup of Chana dal/Bengal gram.

It’s 1small cup of Urad dal/Black gram.

It’s 1 small cup of Yellow moong dal/green gram.

Prepare 1 1/2 tbsp of Cumin seeds.

You need 15-20 of Red chillies.

You need As Required of salt(Approximately one teaspoon).
This is my most favorite item.
When I was a kid, my mom used to make the not-so-spicy version of it for me.
We used to call it as "Annamulo Podi".
But I came to know through some friends that, it was also known as Kandi Podi.

Take moong dal, toor dal, chana dal and urad dal each one small cup.One and half tbsp of cumin seeds and required amount of salt too..

Heat Kadhai and Dry roast Moong dal for 5 minutes or till it’s roasted completely..

Likewise dry roast all the dals/lentils separately till they change into golden brown. Now add red chillies and required amount of salt too. I’ve added rock salt., you can add table salt too. Now roast them for one more minute and switch off the flame. Mix all the ingredients thoroughly for few seconds..

Now transfer the roasted ingredients onto a plate and allow to completely cool down to normal temperature. To increase the shelf life we have to grind the powder when the roasted ingredients are at room temperature..

Transfer the roasted ingredients into a clean and dry mixer grinder. Grind the roasted ingredients till it turns into a fine powder..

Now the traditional recipe kandi podi/Andhra lentils powder is ready to serve. Transfer the Andhra lentils powder onto a bowl and keep it there for few minutes.,because while grinding some amount of heat generates. So it takes few minutes to come down to normal temperature. When it becomes cool transfer into an airtight container or glass jar to retain its freshness. This stays good for minimum two months..
