Meatballs are a favourite with many people and feature in many traditional cuisines.
I grew up with the Spanish style meatballs, known as 'albóndigas', so when I make them I like to stay as true to the traditional recipe as possible.
I like to use dried soya mince which can be flavoured whichever way you want really.

Add the salt and pepper, basil, Sauce and Cherry tomatoes..

Cook until the cherry tomatoes are a little cooked and oil floats on top..

Put the Noodles in the sauce and give it a little toss..

Put it on the plate to serve and add the eggplant ball to the noodles and put a little sauce from the pan and put over them..
