Puliyogare (Pulihora) instructions

Heat oil in a pan and add mustard seeds. When the mustard seeds start to crackle, add chana dal, urad dal and peanuts. Fry till they are roasted and golden brown on a low flame..

Add dry red chilli, curry leaves and fry for few seconds..

Add hing, then onion and tomato and fry for a while..

Next add turmeric powder, chilli powder, garam masala powder and salt. Saute for few seconds till the mixture thickens..

Now add the cooked and cooled rice to the tempering. Mix to coat the rice with spices well. Fry the rice on low medium flame for 2-3 minutes. Then add coriander leaves, cover it and turn off the flame..

Puliyogare is ready. Serve hot as is or with pickles/ fresh homemade yogurt..
