Most of us like hot piping soft idlis with some chutney and sambar. When the idlis are very soft like cotton and served soft with Murugan kadai chutney and Hotel style sambar, it is heavenly.
There are many varieties of Idlis, but the most common idli is the one which is made by the mixture of rice and urad dal.
Finally, serve the hot, steamed idlis in a plate with chutney, sambar and gun powder or podi.
Or Serve in a bowl with the idlis submerged in a pool of sambar.

In cold Country fermenting is difficult so just pre heat the oven for few minutes and let cool down.. Keep the light on and put the vessel inside and it get fermented very well..
