Recipe: Yummy Doodh Puli Delicious, fresh and tasty.

Doodh Puli. Dudh Puli is a famous Bengali milk based Payesh/ Kheer/ Pudding prepared by slow-cooking milk with Puli (also known as rice flour dumplings) stuffed with cooked coconut. I have grown up having with two different types of Dudh Puli. At my ancestral house, Dudh Puli was always and till date prepared with Notun Gur/ Patali Gur.

Harvest festival is as expected celebrated with food made from the fresh harvest of rice and date palm jaggery.

Ingredients of Doodh Puli

  1. Prepare of rice flour.

  2. Prepare of water.

  3. Prepare of salt.

  4. Prepare of sugar.

  5. It’s of cardamom powder.

  6. It’s of lit milk.

  7. You need of bay leaf.

  8. You need of dedicated coconut.

  9. You need of jaggery.

  10. Prepare of ghee.

No, doodh pithi and bengali doodh puli pitha recipe are not the same.

Rather doodh pithi is the same as our one more traditional recipe bengali chusi or choshi pitha.

Pithi is basically made from rice flour or maida and later cooked in doodh and I'll describe the same while introduce my chusi or choshi pitha recipe.

Doodh Puli instructions

  1. Take a pan and heat 1tbs ghee in it. Then add Desiccated coconutand cook it for 1min. Then add 1/2cupsugar to it and cook until sugar dissolve and coconut get cooked. Cool it down..

  2. Take another pan add water, salt and wait for one boil. Then add rice flour to it. Stir it continuously in a medium flame till it will come to a thick consistency. Bring it to room temperature..

  3. Then add 2rbs ghee and mix in properly. Take a small portion of the dough, make a small chapati using your hand and fill some stuffing in it and close its edges. Like this you have to prepare all the pulis..

  4. Take another pan and heat 1lit milk and bay leaf in it. When milk reduce to 3/4 add the pulis to it. Cook it for 5min. Then add condensed milk, cardamom powder, 1/2cup sugar in it and again cook it for 5min in a medium flame. Milk will reduce to 1/2..

  5. Garnish it with some chopped Dryfruits and your Doodh puli is ready..
