Kambu / Pearl Millet Idli. Yes Kambu idli is soft, spongy and lightly grey in color (color from pearl millet) that is super delish to taste and super healthy as well. Kambu idli needs a spicy side dish as it tastes little bland by itself. Do try making it and kickstart you day with healthy breakfast.
Rich in iron, fibre and other minerals, pearl millet is a nutritious grain, with low glycemic index.
I try to incorporate it in the form of rotis, idlis or dosas.

Ingredients of Kambu / Pearl Millet Idli

It’s 1 cup of Pearl millet/Kambu.

You need 1 cup of Idli rice.

It’s 3/4 cup of urad dal.

Prepare 1/8 tsp of methi seeds.

Kambu / Pearl Millet Idli step by step

.Clean rice and millet and soak in water.Soak urad dal and methi seeds together.

.First grind dal mix to a fine paste with some water.Transfer it to a big container..

Then grind rice-millet mix finely.Transfer it to the same container..

Add salt and mix the batter well.Leave it overnight for fermentation..

Next morning mix the batter well, pour into idli plates and steam it..

When done remove from plate and serve hot with your favourite chutney, sambar..
Kambu /Pearl millet, though I have used it before but did not try making idli with it.
