Ndengu. However, I discovered Ndengu, which is the Kenyan-style of mung beans, also called green grams. This greenish stew does not look very inviting, but the taste of the mung beans is wonderful! With some red colour, it looks more delicious - and it tastes so good!

This is 'a la grace' version of a combo of Mexican refried beans and chili, though I used ndengu instead of beans.

You can cook Ndengu using 10 ingredients and 4 steps. Here is how you cook that.

Ingredients of Ndengu

  1. You need of Boiled ndengu (green grams).

  2. It’s of Diced onions.

  3. It’s of Diced tomatoes.

  4. Prepare 1 of pkt Coconut cream (I prefer Kara's small tetrapacks).

  5. You need 2 pinches of salt.

  6. You need 1/2 tsp of black pepper.

  7. You need Pinch of Cumin.

  8. Prepare 1/2 tsp of spanish paprika.

  9. Prepare 2 cloves of diced garlic.

  10. You need of Vegetable oil.

It is a popular delicacy that can be served with a variety of dishes such as rice, chapatti, or even ugali.

Ndengu is delicious, but it is also nutritious at the same time.

Ndengu instructions

  1. Fry the onions in the oil and once transparent add in the diced garlic. Cook until garlic is brown..

  2. Add in diced tomatoes and let them cook. Add in spices and salt and let them cook till the aroma is flowing in your kitchen..

  3. Add in the ndengu and let them fry for a bit then add in the packet of coconut cream. Let this cook for 5-8 minutes and add a little water to reduce thickness..

  4. Add salt to taste and serve with rice or chapati. Enjoy!.

I don't like alot of spice in my Ndengu, I'd rather have all the natural flavors and taste of the ndengus in my soup.

I got some Pre-Cooked green grams samples from Nairobean.

Rice also is a good accompaniment.
