Recipe: Yummy Doodh puli Delicious, fresh and tasty.
Doodh puli. Dudh Puli is a famous Bengali milk based Payesh/ Kheer/ Pudding prepared by slow-cooking milk with Puli (also known as rice flour dumplings) stuffed with cooked coconut. I have grown up having with two different types of Dudh Puli. At my ancestral house, Dudh Puli was always and till date prepared with Notun Gur/ Patali Gur.
Pithi is basically made from rice flour or maida and later cooked in doodh and I'll describe the same while introduce my chusi or choshi pitha recipe.
It is prepared with the date palm jaggery filled with mawa and coconut.

Doodh puli step by step

Take pot add water when it starts boiling add the rice flour..

Mix it continuously for 2 minutes. Switch off the flame. Cover and keep for few minutes..

After few minutes knead it really well. Till it forms soft dough..

Knead when its hot..

Now boil the milk add bay leaf and cardamom powder. In other hand make fine stick like thing using the rice flour..

Take few drops of oil. Spread it on your palm. It will help not sticking to the palm.

Once its done and milk starts boiling add the flour balls and sticks..

Cook till the sticks floats. Add sugar and condensed milk. Mix and cook for another few minutes..
