Idli Podi (milagai podi) is a flavorful spicy chutney powder, which is mixed with ghee or sesame oil (gingelly oil) and served as an accompaniment with idli or dosa in most of the south Indian households. All the ingredients (Chana dal, urad dal, dry red chillies, sesame seeds, curry leaves and asafetida) are roasted separately and the ground to fine or slightly coarse powder to make this. It is a spicy dry powder which is served as an accompaniment with Idli, Dosa, Upma or even with South Indian meals of Rice and Sambar.

It’s 2 Tbsp of Chana Dal.

You need 1 Tbsp of Urad Dal.

It’s 1 Tbsp of white til/ sesame seeds.

It’s 1/4 Tsp of Rai/ Mustard Seeds.

You need 1/4 Tsp of Methi/ Fenugreek seeds.

Prepare 6-8 of Whole Bedki chillies.

You need 8-10 of Curry Leaves.

You need 1/2 Tsp of + 1/2 Tsp cooking oil.

You need 1/4 Tsp of Hing and Salt to taste.
This is a spicy Milagai Podi (also called Molaga Podi, Idli Chutney Powder) made with tuvar dal, udad dal, tamarind and two different types of chillies.
The result is a tangy, spicy podi that tastes fabulous with idlis and dosas.
Milagai podi or dosa podi is a spicy dry lentil chutney powder usually taken along with South Indian breakfast dish, dosai or idly.

Roast Til dry and remove it in a plate..

Take a tsp Oil, add whole bedki chillies and curry leaves and stir fry them. And Remove..

Add a tsp oil, and add both dals, rai and methi dana. Stir fry them too and remove..

Add Grind Til and Dal mixture first and grind it.

Add Chillies and hing and salt and now grind again..

Our Podi is ready. Store in an Air Tight Container..
Dry red chillies are roasted with a lentil mixture (split black gram and split chick peas or Bengal gram dal) along with sesame seeds (optional), curry leaves (also optional, but gives an amazing healthy twist to the chutney powder!), mustard seeds and hing/asafetida and then powdered either.
