Recipe: Appetizing Kachariyu Delicious, fresh and tasty.

Kachariyu. Gujarati Kachariyu Recipe is a traditional spiced sesame and coconut ladoo filled with dates and figs. Preparation of Kachariyu is a winter time tradition in Gujarati households, when they get into the rituals of preparing warm/heat-inducing foods to cope with bitter weather outdoors. You can have Kachariyu using 9 ingredients and 9 steps. Here is how you achieve that.

Ingredients of Kachariyu

  1. You need of black sesame seeds.

  2. It’s of chopped dates.

  3. It’s of gundara/gund.

  4. Prepare of grated dry coconut.

  5. Prepare of dry ginger powder.

  6. It’s of ganthoda powder.

  7. You need of almonds.

  8. You need of For garnishing poppy seeds and almond.

Kachariyu basically means to grind as everything is ground to make a fudge like energy bar like sweet.

You can add or leave anything you do not like but I would not consider.

Kachariyu instructions

  1. Take 1 tbsp ghee heat and add 1 tbsp gundara..

  2. The gundara will pop in the pan stir contininuously. Remove it from pan and grind coarsely..

  3. Roast sesame seeds on low flame for 2 to 3 minutes and keep aside…

  4. Grind all the ingredients in a mixer jar..

  5. Transfer the ground mixture to a mixing bowl and add ground gundara..

  6. Knead until oil comes out and garnish with almond, coconut and poppy seeds..

  7. Fill the kachariyu in an airtight container..

  8. Kachriya is always filled in a dabba/container..

  9. And eaten spoonfuls in the morning..

Winter sees the harvest of oil seeds like sesame and groundnut.

The residue of the oil removal process is mixed with jaggery to make Kachariyu.

It is a simple recipe that can put together in no time.
