Nolen Gurer Payesh (Jaggery Pudding). And today I made "Nolen Gurer Payesh" with the Jaggery, and belive me my kitchen is filled with the sweet flavor of the Nolen Gur. And after long time we tasted our tradional "Nolen Gurer Payesh" Payesh is nothing but Indian style Rice Pudding, made by boiling milk, basmati or any aromatic rice and sugar or jaggery. Bengali nolen gurer payesh or chaler payesh / rice pudding with date jaggery / molasses is the most favoured desserts in Bengali homes for any occasions.

Jaggery Rice-Milk Pudding/Nolen Gurer Payesh/Gur ka Kheer is nothing but what we call Kheer in Hindi, Rice-milk Pudding in English and Payasam in Telugu (only additional jiggery with it).

It is very common dish you would find in every Bengali house during Durga Puja/Lokhi Puja or any other auspicious occasions.

Nolen Gurer Payesh or Jaggery flavored Rice Pudding is a signature dish of Makar Sankranti celebration which is known more popularly as Poush Parbon in West Bengal.

You can cook Nolen Gurer Payesh (Jaggery Pudding) using 6 ingredients and 9 steps. Here is how you achieve that.

Ingredients of Nolen Gurer Payesh (Jaggery Pudding)

  1. Prepare 1 cup of Basmati Or Gobindo Bhog Rice soaked into cold water for 30 minutes.

  2. You need 1 ltr of Whole Or Full Fat Milk.

  3. Prepare 1 of Bay Leaf large.

  4. Prepare 2 of Crushed Green Cadamom Pods.

  5. Prepare 1/2 cup or adjust to your taste, of Date Palm Jaggery if you like you may add more of it.

  6. Prepare As needed of Chopped Nuts,Raisins for garnishing.

It needs only three basic ingredients rice, milk and jaggery.

But it needs hell lot patience and expertise.

Party sources said he had a spread of roti, cholar (chana) dal, rice, shukto (a famed Bengali dish of stewed vegetables which is slightly bitter), moong dal, fried brinjal, chutney rounded off with nolen gurer payesh (rice pudding with date palm jaggery).

Nolen Gurer Payesh (Jaggery Pudding) step by step

  1. Take a large sauce-pan and add 4 tablespoons of water in it. Now add the milk and put on medium heat..

  2. When the milk will start boiling, stir constantly to prevent burning the milk..

  3. When the milk will be 1/2 of its original quantity, add the rice, but not with the water, in which the rice was soaked. Let the rice to cook enough..

  4. In the meantime take 2 tablespoons of the boiling milk in a small bowl, and add little Jaggery in the milk and mix it..

  5. If the milk is not curdelled, the jaggery is good. If it has curdeled, the Jaggery is not at all good, you have to add sugar instead of the jaggaery..

  6. Just add 1/2 cup of sugar and adjust to your taste. When the rice will be completely cooked, add the Jaggery/ Sugar and cook for another 10 minutes, stirring constantly..

  7. Turn off the heat after 10 minutes. Let the "Payesh" cool down completely, and keep inside the refridegerator for 2-3 hours..

  8. Remove the "Nolen Gurer Payesh" just before serving..

  9. Garnish with chopped nuts,raisins before serving..
